Red Beans and Rice

Loaded with good-for-you-veggies, this red (or black) beans and rice recipe is sure to fill you up!

Ingredients

  • 1 can red or black beans
  • 1 1/2 cups vegetable or chicken broth
  • 1 cup white rice
  • 1 TBSP chili powder
  • 1 1/2 tsp ground cumin divided
  • 1 tsp turmeric
  • 2 tsp salt divided
  • 1/2 tsp black pepper
  • 1 medium onion chopped
  • 1 red or green pepper, seeds removed chopped
  • 3 cups raw spinach
  • 1 tsp oil

Instructions

  1. Drain and rinse beans and place in medium saucepan and cover with water

  2. Bring to a boil, then add chili powder, 1 tsp cumin, turmeric, and pepper

  3. Simmer for 20 minutes, stirring occasionally.  Add salt at the end.

  4. In a medium skillet with a lid, saute the onion and pepper until soft.

  5. Pour in the broth and bring to a boil

  6. Add the rice, cover and reduce heat.  Simmer for 15 minutes or until rice is done.

  7. Add the spinach and cover with the lid for 5 minutes

  8. Use a slotted spoon to add the beans to the rice mixture and serve.
