Ingredients

  • 1 tbsp olive oil or other cooking oil
  • 1/2 cup olive oil or other cooking oil
  • 1/2 cup sunflower kernels optional
  • 1/2 cup slivered almonds optional
  • 2 packages coleslaw mix (shredded cabbage)
  • 12 green onions chopped
  • 1 medium sweet red or green pepper chopped
  • 1/3 cup cider vinegar
  • 1/4 cup sugar
  • 1/8 tsp black pepper
  • 1 package ramen noodles

Instructions

  1. Toast almonds and sunflower kernels in a large skillet with 1 TBSP oil over medium heat about 4 minutes

  2. In a large bowl, combine coleslaw mix, onions, and peppers

  3. In a small bowl, whisk together vinegar, sugar, pepper, ramen seasoning mix, and 1/2 cup oil

  4. Pour mixture over salad and toss to coat

  5. Refrigerate until serving

  6. Break noodles into small pieces and stir in noodles, almonds, and sunflower kernels just before serving
