Potato pancakes are easy, crispy and delicious. This recipe uses instant mashed potatoes!
Combine cold water, beaten egg, and salt in large bowl using a whisk or fork
Mix in dry potato flakes
Stir in 1 tbsp chives (optional) and pepper
Divide mixture into 4 and shape into pancakes
Heat oil and butter in a large skillet over medium-high heat, swirl to combine
Place pancakes into pan and reduce heat to medium
Cook until bottoms are browned, about 10 minutes
Flip and cook another 7-8 minutes until other side is browned
Top each with sour cream and remaining chives (optional) or other toppings like whip cream, honey, fruit, jam, syrup
