Chicken Ramen Noodle Soup
Delish and nutritious soup with food pantry staples, a few fresh vegetables, and spices!

Ingredients
- 1/2 cup celery chopped
- 1/2 cup onion chopped
- 1/2 tsp minced garlic
- 7 cups water
- 1 1/2 cups fresh vegetables (asparagus, beans, corn, peas) cut into 1 inch pieces
- 1/2 cup cabbage chopped
- 1/2 tsp parsley dried
- 3/4 tsp tarragon dried
- 1 dash cayenne pepper optional
- 2 packages ramen noodles chicken or mushroom flavor
- 2 cans chicken or 2 cups leftover cooked chicken
Instructions

In large pot, saute celery and onion until tender

Add garlic, cook 1 minute longer

Stir in water, vegetables, and spices. Bring to boil

Coarsely crush noodles, add noodles & seasoning packet to the pot

Simmer 3-5 minutes until noodles and vegetables are tender

Add chicken and heat through
