Chicken Ramen Noodle Soup

Delish and nutritious soup with food pantry staples, a few fresh vegetables, and spices!

Ingredients

  • 1/2 cup celery chopped
  • 1/2 cup onion chopped
  • 1/2 tsp minced garlic
  • 7 cups water
  • 1 1/2 cups fresh vegetables (asparagus, beans, corn, peas) cut into 1 inch pieces
  • 1/2 cup cabbage chopped
  • 1/2 tsp parsley dried
  • 3/4 tsp tarragon dried
  • 1 dash cayenne pepper optional
  • 2 packages ramen noodles chicken or mushroom flavor
  • 2 cans chicken or 2 cups leftover cooked chicken

Instructions

  1. In large pot, saute celery and onion until tender

  2. Add garlic, cook 1 minute longer

  3. Stir in water, vegetables, and spices. Bring to boil

  4. Coarsely crush noodles, add noodles & seasoning packet to the pot

  5. Simmer 3-5 minutes until noodles and vegetables are tender

  6. Add chicken and heat through
