Instant Potato Pancakes

Potato pancakes are easy, crispy and delicious. This recipe uses instant mashed potatoes!

Ingredients

  • 1 cup cold water
  • 1 large egg beaten
  • 1/2 tsp salt
  • 3/4 cup dry potato flakes
  • 1 pinch ground pepper
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 2 tbsp chopped fresh chives optional
  • 1 pinch cayenne pepper optional
  • 1/4 cup sour cream optional

Instructions

  1. Combine cold water, beaten egg, and salt in large bowl using a whisk or fork

  2. Mix in dry potato flakes

  3. Stir in 1 tbsp chives (optional) and pepper

  4. Divide mixture into 4 and shape into pancakes

  5. Heat oil and butter in a large skillet over medium-high heat, swirl to combine

  6. Place pancakes into pan and reduce heat to medium

  7. Cook until bottoms are browned, about 10 minutes

  8. Flip and cook another 7-8 minutes until other side is browned

  9. Top each with sour cream and remaining chives (optional) or other toppings like whip cream, honey, fruit, jam, syrup
