Ham, Mushroom, and Cheese Frittata

Ingredients

  • 1 tbsp butter
  • 1/2 cup mushrooms
  • 1/4 onion diced
  • 8 eggs
  • 2 tbsp milk, water, or cream
  • 3/4 cup cheddar shredded
  • 1/2 cup ham diced
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 green onions optional

Instructions

  1. Preheat oven to 350 degrees

  2. Melt butter in skillet over medium heat

  3. Add onions & mushrooms and saute until tender

  4. In a large bowl, beat the eggs and milk/water together

  5. Add 1/2 cup of the cheese, and rest of ingredients

  6. Pour into greased pan or oven-safe skillet

  7. Bake in the oven for 20 minutes

  8. Top with remaining cheese and return to the oven for additional 10 minutes

  9. Remove from the oven and cool for 5 minutes before cutting
