Mexican Chicken and Rice

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 1 tsp garlic salt
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 4 cups cooked rice
  • 2 cups shredded or canned chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn fresh, canned, or frozen
  • 1 can diced tomatoes
  • 2 jalapenos or diced chiles
  • 1 cup shredded cheese

Instructions

  1. Cook rice according to package directions

  2. In a large skillet, heat oil and cook onion until soft, 5 minutes

  3. Add rice to skillet

  4. Add salt and spices

  5. Stir in beans, corn, tomatoes, jalapenos, and chicken

  6. Cook, stirring occasionally for 5 minutes

  7. Top with cheese and cover with lid to melt, 2 minutes

  8. Serve
