Mexican Chicken and Rice

Ingredients
- 1 tbsp olive oil
- 1 medium onion chopped
- 1 tsp garlic salt
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 4 cups cooked rice
- 2 cups shredded or canned chicken
- 1 can black beans, drained and rinsed
- 1 cup corn fresh, canned, or frozen
- 1 can diced tomatoes
- 2 jalapenos or diced chiles
- 1 cup shredded cheese
Instructions

Cook rice according to package directions

In a large skillet, heat oil and cook onion until soft, 5 minutes

Add rice to skillet

Add salt and spices

Stir in beans, corn, tomatoes, jalapenos, and chicken

Cook, stirring occasionally for 5 minutes

Top with cheese and cover with lid to melt, 2 minutes

Serve
