Red Beans and Rice
Loaded with good-for-you-veggies, this red (or black) beans and rice recipe is sure to fill you up!
- 1 can red or black beans
- 1 1/2 cups vegetable or chicken broth
- 1 cup white rice
- 1 TBSP chili powder
- 1 1/2 tsp ground cumin divided
- 1 tsp turmeric
- 2 tsp salt divided
- 1/2 tsp black pepper
- 1 medium onion chopped
- 1 red or green pepper, seeds removed chopped
- 3 cups raw spinach
- 1 tsp oil
Drain and rinse beans and place in medium saucepan and cover with water
Bring to a boil, then add chili powder, 1 tsp cumin, turmeric, and pepper
Simmer for 20 minutes, stirring occasionally. Add salt at the end.
In a medium skillet with a lid, saute the onion and pepper until soft.
Pour in the broth and bring to a boil
Add the rice, cover and reduce heat. Simmer for 15 minutes or until rice is done.
Add the spinach and cover with the lid for 5 minutes
Use a slotted spoon to add the beans to the rice mixture and serve.
