Easy Vegetable Soup

Ingredients

  • 2 tbsp oil olive or canola
  • 1 cup onion chopped
  • 2 cups carrots chopped or canned
  • 1 cup celery chopped (optional)
  • 4 cans low-sodium broth 14.5 oz
  • 2 cans diced tomatoes or tomatoes and chiles for spice
  • 1 can potatoes drained & cut up
  • 1 can green beans drained
  • 1 can corn drained
  • 1 can peas drained
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic salt
  • 1/4 tsp black pepper

Instructions

  1. Heat oil in large pot over medium-high heat

  2. Saute onions, carrots, and celery 4 minutes

  3. Add rest of ingredients

  4. Bring to boil, then reduce heat to medium-low

  5. Cover and simmer for about 30-45 minutes
