Tuna Noodle Casserole

Ingredients

  • 8 oz pasta
  • 1 tbsp butter or olive oil
  • 1 rib celery optional
  • 1/4 cup onion diced
  • 1 clove garlic minced
  • 1/2 cup mushrooms sauteed or canned/drained
  • 1/2 cup zucchini or summer squash diced (optional)
  • 1 cup spinach, kale, or other greens chopped (optional)
  • 1/2 cup peas fresh or frozen
  • 1 can tuna, chicken, or turkey
  • 1 can cream of mushroom, chicken, or celery
  • 1/2 can water
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup parmesan cheese grated
  • 1/2 cup crackers (butter or saltine)
  • 1 tbsp butter

Instructions

  1. Cook the noodles just until al dente according to package instructions

  2. Saute vegetables and garlic using butter or oil

  3. Add canned meat and heat through

  4. Stir in cream soup and 1/2 can water

  5. Add parmesan cheese, salt, and pepper

  6. Combine mixture with pasta into a 9x13 or similar baking dish

  7. Melt butter and mix with crushed crackers.  Sprinkle over casserole

  8. Bake at 350 for 25-30 minutes
